Suggest a better descriptionIn a large bowl, toss together squash, onion, oil, salt, pepper and cayenne pepper until well coated. Arrange in a single layer on foil lined backing sheet. Bake in centre of 375F oven for 30 minutes.
Stir in apples and bake for another 15 minutes or until squash and applies are very soft. Cool for 5 minutes.
Transfer mixture to a large bowl. Using potato masher, mash coarsely. Onions will not mash but only soften. Scrape mixture into an 11 x 8 or 13 x 9 inch ovenproof gratin dish.
Puree can be covered with plastic wrap and refrigerate for up to 24 hours. Bring to room temperature for 30 minutes. Reheat, covered, with aluminum foil in 350F oven for 35 to 45 minutes or until heated through.
TOPPING:
In a small skillet set over medium heat, melt butter. Add sage leaves and sugar; cook, stirring, for about 2 minutes or until leaves re crispy. Sprinkle over top of casserole to serve.
