Coat the bottom of a large heavy-bottom saucepan with the vegetable oil. Add the onion, garlic, red pepper and zucchini to the pan. Cook over low heat, stirring occasionally, until the vegetables are very soft, about 5 minutes. Add the chicken and turn the heat up to medium-high. Stir until the chicken is cooked lightly on all sides. Add the tomatoes, rice, chicken broth and salt. Bring the broth to a boil and then adjust the heat to maintain a slow simmer. deathcabforashy 2 months agoMy housemate loved this! I left out the onions and replaced the zucchini with a yellow bell pepper. Pretty tasty but I baked mine for the last 20 minutes in the oven so I thought the rice was a bit too soggy. Also only used one tomato. Overall worth trying though :)
circuspeanut 11 month agoSuper yummy. Added mushrooms, and used White Rice instead of the brown.
netclimbers 1 year agoTasted great. Just started cooking so was easy for me to do. I used brown rice instead of white rice and it seemed the rice could have cooked longer. Other than that good stuff and my kids liked it.
kirstenshaw 1 year agoDelicious and even my picky kid ate it. The brown rice was still a bit crunchy though if anyone has any suggestions. Wasn't sure if I should just cook longer or at a higher temp...

RNloser 2 years agoLoved this recipe! I cut up the chicken in bite size chunks and after the rice was cooked I mixed in a can of cream of mushroom soup and bake at 400 degrees for about 10-15 minutes until nice a bubbly. Delish!

Aolingh 2 years agoVery easy and quick to put together. Next time, I will add more rice or use less broth since it seemed a bit soupy.
