Suggest a better descriptionOver a medium heat fry the turkey bacon in 2 tablespoons of water until crisp. Transfer to a paper towel.
Then fry the bell pepper and onion in 2 teaspoons of water for about 5 mins until soft. Add the stock and potatoes and bring to the boil. Reduce he heat and simmer, partially covered, until the potatoes are tender, about 15 mins. Then stir in the corn and simmer for a further 5 mins. Remove from the heat and cool slightly.
Transfer 2 cups into a food processor and purée. Pour back into the saucepan, stir in the cream and the turkey bacon and heat to serving temperature.
