I found this recipe on a suggestion card in a supermarket and tried it and was impressed by how yummy it is. It is easy enough without a lot of rare ingredients. It is a nice mix of curry flavour with beef and cauliflower.
1 - Combine the yogurt, cornstarch, curry powder, honey mustard and pepper to taste in a small bowl. Stir well with a whisk and set aside.
2 - Heat a large oiled skillet over high heat.
3 - Add meat and saute for 3 minutes or until brown. Remove from skillet and set aside.
4 - Add cauliflower and broth. Cover and reduce heat and simmer 3 minutes.
5 - Return meat to skillet and stir in yogurt mixture.
6 - Add snow peas and bring to a boil; cook two minutes, stirring gently.
7 - Toss with pasta before serving,
8 - Garnish with toasted almonds if desired.
"Some like it hot! If not, try chilling before serving, or adjust the 'heat' by using mild instead of hot curry powder. Good served cold as a luncheon salad."
