Suggest a better descriptionBring stock to simmer and add saffron. Cover and keep warm over low heat. If using Chicken (or other type of stock) shrimp and lobster shells can be added to stock to give fish/seafood flavor but will need to be strained before adding to paella.
Broil poblanos in oven or heat over flame to blacken skin. Let cool, then remove skin and seeds and chop finely.
Place 15 " paella pan (or heavy skillet) over one very large burner or two smaller ones. Add oil and heat over medium-high heat. Add lobster tail/claws and sauté for two minutes. Transfer tail to larger bowl using slotted spoon. Add shrimp and sauté for two minutes. Add scallops and sauté for two minutes. Transfer to bowl w/ lobster. Add fish and salt and sauté for two minutes. Add to bowl with other seafood. Add chorizo and cook until done. Remove to bowl with other seafood.
Place poblanos in pan and cook for two minutes. Add garlic and cook for one minute. Add three tablespoons of Garlic Alioli and paprika and stir to combine. Stir in tomatoes and bay leaf and cook for two minutes. Add rice stir to coat well. Add half of stock and cook stirring constantly until rice absorbs most of liquid. Add peas and remainder of stock and continue stirring frequently. Taste and add salt if needed. Cook until rice is just before al-dente. If rice starts to get too dry add a little bit of water.
Once rice is done add all meats except for shrimp and stir in and cook for an additional 10 minutes. Turn off heat and use shrimp and pimentos (and other seafood as appropriate) to decorate top. Cover with aluminum foil and let sit 10-15 minutes before serving.
