Quick and easy Eclair pie for the family to enjoy! Great way to get the kids involved with a scrumptious treat!!!
Mix pudding with milk. Beat 2 minutes and let stand for 5 minutes.
Whip non-dairy topping and fold in to pudding mixture.
Spray or lightly grease 13 x 9 inch pan.
Line pan with crackers, then spread 1/2 pudding mix on crackers. Repeat a layer of crackers and remaining pudding.
Cover the pudding with a last layer of crackers. Spread chocolate frosting on top.
Allow time in fridge to chill.
Warm the Chocolate Frosting slightly to spread over crackers easily.
Refrigerate approx. 3 hours before serving.
