2. Sautee onions in 10" non-stick pan with 4 TBL of olive oil. Low for 5 mins.
3. Add potatoes and meat. Cook 15 additional mins until potatoes are soft but firm.
4. Distribute fod in pan. Add eggs evenly. Cover and cook until firm.
5. Invert over plate.
Options
Meat: Salmon, bacon, browned steak, panchetta
Spices: Oregano, Fresh basil, other
Vegitables: Sweet potatoes, leeks, roasted red pepper, spinach, scalions
Cheese: add to egg mix
Try sauteing the onions for 30 mins to create that great sweetness.
Can use pancetta for meat
