Season chicken with salt & pepper. Lay potato slices on foil, place chicken on top of them,and sprinkle chopped veggies over chicken. Fold foil to seal securely, place on cookie sheet, and cook for 20 minutes or until done. (Veggies should be tender crisp, potatoes should be fork soft, and chicken should no longer be pink in center.)
