This casserole comes from Mr. Food. I thought it might taste similar to the family recipe "little Eva's hominy" except easier to prepare.
Preheat oven to 350 degrees F. Coat a 8-inch square baking dish with cooking spray.
In a large bowl, combine sausage, white and yellow hominy, 1/2 cup cheese, pimiento, onion, eggs, and parsley; mix well.
Spoon into a baking dish. Sprinkle remaining 1 cup cheese evenly over the top.
Bake 50 to 55 minutes, or until sausage is cooked through and the cheese is golden.
Cut and serve.
(consider adding small tomoatoes, cut in half. Might taste like little Eva's hominy)
