serve warm, is great w/a warm lemon sauce or apple sauce poured over it but can be eaten on it's own
Cake:
Combine flour, sugar, ginger, and cinnamon: cut in shortening. reserve 1/4 cup for topping. Add egg to remaining flour mixture and stir in molasses. Dissolve baking soda and salt in buttermilk or yogurt. Add to mollasses mixture and pour into greased 8-inch square pan. Sprinkle the reserved topping over batter. Bake at 350 for approximately 30 minutes.
Sauce:
Mix sugar, cornstarch, salt, and nutmeg in a small pan. Gradually stir in water. Cook and stir over low until thick and bobbly. Stir a little bit of the mixture into 2 beaten egg yolks, then return the yolk mixture into the hot mixture in pan. Cook and stir 1 minute. Remove from heat; add the butter, the grated lemon rind and the lemon juice.
serve a slice of cake on to individual plates and scoop 2-3 large spoonfuls over each slice. If serving on a different day from baking-warm the cake slice up in a microwave and separately warm up sauce and spoon over it. You may also use warm apple sauce instead of lemon sauce.
