It cuts the cooking time in half! The Cook's Essentials® 6-quart pressure cooker (K22739) uses digital technology to safely do the cooking in just one hour. This recipe calls for a brine of apple cider, which gives the meat a wonderful flavor. Adding the veggies in the last 15 minutes helps them stay crisp and flavorful. If green cabbage isn't your favorite, substitute it for Brussels sprouts, Savoy, or red cabbage.
Directions:
Put the corned beef into the pressure cooker with the seasoning packet, mustard powder, allspice, and herbs. Cover with apple cider. Lock the lid and cook on high pressure for 45 minutes. Quick release the pressure and then remove lid. Add carrots, onions, potatoes, and cabbage. Cook on high pressure for an additional 15 minutes. Quick release the pressure and then remove lid. Remove the tied herbs and discard. Stir in the chopped parsley, rosemary, and chives. To serve, place a plank of corned beef on a platter and surround by the vegetables and broth.
