Diced Ahi tuna tartar mixed with guacamole and served with baked sweet potato chips and a sweet citrus-soy sauce
1. Preheat oven to 200*F. After peeling and slicing sweet potato line a baking sheet with parchment paper, and lay a singular layer of chips on the baking sheet. Sprinkle sweet potatoes with 1 tsp kosher salt and 1/2 tsp fresh cracked black pepper. Place in the oven and bake for 30 minutes or until done. Remove from oven and let cool when finished.
2. Meanwhile pit and dice up the avocado. Add to mixing bowl with 1 tsp kosher salt, 1/2 tsp fresh cracked black pepper, 1 tsp olive oil and the juice from 1/2 of the lime. Using a fork mix well until smooth and keep refrigerated.
3. In another mixing bowl combine the diced Ahi tuna with 1 tsp olive oil, juice from 1/4 of the lime, 1 tsp kosher salt, 1/2 tsp fresh cracked black pepper, and 1 tbsp ponzu sauce (recipe follows). Store in refrigerator.
4. In another bowl mix green onions, soy sauce, rice wine vinegar, granulated sugar, honey and grated ginger.
5. In the middle of the serving bowl/plate place smooth avocado mixture on the bottom, topping with the Ahi tuna mixture (option to use ring mold to help with plating). Place the baked potato chips around the tuna and avocado and drizzle 2 tbsp of the ponzu sauce around the tuna making sure to avoid the chips as to not soften the chips.
In this recipe it would also work to mix the avocado and tuna mixtures to help those who have problems eating the raw tuna or dealing with the raw tuna texture. Also if you prefer to not make the ponzu sauce you could easily substitute straight soy sauce or any sweet Asian-style sauce you prefer. Another time saving switch can be picking up any store bought chips you like and substituting them for the sweet potato chips.
