This is an easy recipe that emphasizes the wholesomeness of fresh cooked spinach

1 Tbs butter
2 Tbs olive oil
2 lbs spinach; well washed, stemmed and finely chopped
salt,; to taste
black pepper; freshly ground
1 fresh garlic clove; minced, (optional)
1/4 cup dry bread crumbs

Preparation

Preheat oven to 375 degrees. Butter a flat gratin dish with the tablespoon of butter. Arrange spinach in the dish and season with the salt and pepper. Sprinkle with garlic if desired. Spread bread crumbs over spinach and drizzle oil over it. Bake at 375 degrees for 20 to 25 minutes, until spinach is tender and crumbs are browned.
