Fall apples with aromas of vanilla and cinnamon, all baked in a buttery crust.
For crust: in a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs, do not overblend. Stir in water, a tablespoon at a time, until mixture starts to form a ball (you may not need all the water). Wrap in plastic and refrigerate for at least 2 hours or overnight (this allows the gluten to relax and prevent shrinkage).
Peel and core apples, and place in an x-large bowl (you may want to fill bowl with water and add a little fruit fresh while peeling, empty water afterward). Using a food processor, slice apples very thin and place in bowl. Sprinkle vanilla, brown sugar, flour, cinnamon and nutmeg on top and toss gently.
Preheat oven to 350°. Roll dough out to fit a 9 inch deep pie plate. You may need to roll out the dough twice if first roll is crumbly. Just form another ball, flip it over, and roll out again. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.
Pour apples into pie shell, cover with tin foil, and bake for 45 minutes. While pie is baking, make crumbly topping by combining brown sugar, flour, oat bran, and cinnamon. Cut in butter until mixture resembles coarse crumbs. When timer goes off, uncover pie and sprinkle topping all over top to the edges. Bake uncovered for 25 minutes, or until pie is bubbling. Let cool on wire rack before serving.
