Suggest a better descriptionSable Paste 1. Mix together until a smooth paste is formed. 2. Roll out the paste until fairly thin and cut out with a large heart shaped cutter. Place onto a baking sheet and cook until lightly golden 150?c for approximately 6 - 8 minutes. Sprinkle with icing sugar and leave to cool. Berries 3. Place the whole fruit into a stainless steel bowl. 4. Puree the 150g, sweeten with icing sugar and pass through a fine sieve. 5. Add to the whole fruit and mix together well. 6. Place this into a thick bottomed saucepan and warm through gently. Assemble 7. Place the clotted cream or vanilla ice cream on to the centre of a plate. 8. Spoon over the warm berries and place a sable biscuit on the top. 9. Garnish with a sprig of mint. NOTES : Chef:Aaron Patterson
