Black Beans and Rice

Ingredients

1 tbsp olive oil

1/3 cup onion diced

1 chicken bullion cube

1 cup uncooked white rice

2 1/3 cup chicken broth

10 oz can diced tomatoes with green chilis

15 oz can black beans drained and rinsed

1 tsp salt

1/2 tsp pepper

1 tsp cumin

1 tsp chili powder

1 tsp onion powder

1 tsp garlic powder

Shredded cheese: optional


Directions

To a large deeper pan on the stove over medium heat add the oil once hot add in the onion and let cook for 2-3 minutes stirring often. Now add in the uncooked rice, chicken broth, rotel, black beans, and seasonings stir well. Let simmer (stirring occasionally) for 20-25 minutes or until the rice is tender. Top with cheese – optional – and enjoy
