Spicy Mexican-style Meatloaf

Ingredients

1 slice whole wheat double fiber bread (or GF bread)

1/2 cup finely chopped onion

1/2 cup finely chopped red bell pepper

1/4 cup chopped fresh cilantro

1/4 cup egg substitute (or 1 whole egg)

1 tsp salt

1/2 tsp ground cumin

1/2 tsp ground oregano

1/2 tsp black pepper

1 cup ketchup divided

2 tsp chipotle chilies canned in adobo sauce, chopped and divided

1 tsp adobo sauce

2 pounds ground meat

Cooking spray

1 tbsp honey

1/2 tsp ground cumin


Directions

Heat oven to 350 Place bread in food processor; pulse 10 times or until coarse crumbs measure 1/2 cup Combine bread crumbs and next 8 ingredients. Stir in 1/2 cup ketchup, 1 1/2 tsps chipotle chilies and adobo sauce in large bowl. Add beef, stir until well blended. Shape mixture into 8x4 inch loaf pan and place on broiler pan coated with cooking spray. (I have a meatloaf pan that allows grease to drip off) Bake at 350 for 45 minutes. While meatloaf bakes, combine 1/2-cup ketchup, honey, 1/2 tsp cumin, and remaining 1/2 tsp chipotle chilies in small bowl; set aside. At 45 min, spread ketchup mixture over meatloaf. Bake an additional 15 min or until thermometer registers 160 degrees. (Mine took an additional 10 min.) Let stand 5 min before slicing.
