Spicy Mexican-style Meatloaf
Heat oven to 350
Place bread in food processor; pulse 10 times or until coarse crumbs measure 1/2 cup
Combine bread crumbs and next 8 ingredients. Stir in 1/2 cup ketchup, 1 1/2 tsps chipotle chilies and adobo sauce in large bowl. Add beef, stir until well blended. Shape mixture into 8x4 inch loaf pan and place on broiler pan coated with cooking spray. (I have a meatloaf pan that allows grease to drip off)
Bake at 350 for 45 minutes. While meatloaf bakes, combine 1/2-cup ketchup, honey, 1/2 tsp cumin, and remaining 1/2 tsp chipotle chilies in small bowl; set aside.
At 45 min, spread ketchup mixture over meatloaf. Bake an additional 15 min or until thermometer registers 160 degrees. (Mine took an additional 10 min.) Let stand 5 min before slicing.
