Cornbread Tamale Pie

Ingredients

1 tablespoon Olive oil

1 pound Ground beef or turkey

1 cup yellow onion chopped

1 tablespoon Garlic minced

1 Jalapeno Pepper seeded and minced

? Fire-roasted corn TJ's?

1 can Diced tomatoes 14.5 oz

1/8 cup Ketchup

1 tablespoon apple cider vinegar

2 teaspoons Dijon mustard

1 1/2 teaspoons Kosher Salt

1 teaspoon Chili powder

1 1/2 teaspoon Dried oregano

1/4 teaspoon Cumin

1 1/2 cup Sharp Cheddar cheese shredded / separated

1 package corn muffin mix Jiffy or other

1/2 cup whole Buttermilk

1 large egg lightly beaten


Directions

1. Preheat oven to 400. 2. In a 10 inch cast iron skillet, heat olive oil over medium-high heat. Add ground meat, cook, stirring occasionally, until brown and crumbly approximately 5 minutes. Add onion, garlic, jalapeno and corn if using. Cook, stirring occasionnaly, until softened, 5 to 6 minutes. 3. Stir in tomato, ketchup, vinegar, mustard, salt, and spices and herbs. Bring to a boil; remove from heat. Sprinkle with 1 cup cheese. 4. In a medium bowl, stir together corn muffin mix, buttermilk and egg. Pour batter over meat mixture. Top with remaining 1/2 cup cheese. 5. Bake until golden brown, 15 to 17 minutes.
