2. In a 10 inch cast iron skillet, heat olive oil over medium-high heat. Add ground meat, cook, stirring occasionally, until brown and crumbly approximately 5 minutes. Add onion, garlic, jalapeno and corn if using. Cook, stirring occasionnaly, until softened, 5 to 6 minutes.
3. Stir in tomato, ketchup, vinegar, mustard, salt, and spices and herbs. Bring to a boil; remove from heat. Sprinkle with 1 cup cheese.
4. In a medium bowl, stir together corn muffin mix, buttermilk and egg. Pour batter over meat mixture. Top with remaining 1/2 cup cheese.
5. Bake until golden brown, 15 to 17 minutes.
