Creamy Sweet Potato Soup

Ingredients

4 sweet potatoes

1/4 C cream

2 T butter

1 C chopped onion

1/4 t ground cumin

1/4 t crushed red pepper flakes

4 C unsalted chicken stock

1/4 t salt

6 bacon slices

Parmesan for garnish

Directions

Bake sweet potatoes Sauté onions in butter, stir in cumin and red pepper Add stock to pan and bring to low boil Add sweet potatoes and blend with hand blender until smooth Remove from heat and stir in cream Garnish with bacon and Parmesan
