Crispy SW Chicken Wraps

Ingredients

1 cup cooked brown rice or quinoa

1 cup cooked shredded chicken

1 can black beans rinsed and drained

1/2 red or green pepper, diced

1/4 cup fresh cilantro, chopped

1 teaspoon Cumin

1 teaspoon Chili powder

1/2 teaspoon chopped garlic

1 Lime Juice

2 cups Shredded cheese

6 Flour tortillas


Directions

Mix quinoa with chili powder, cumin, & garlic. Add remaining ingredients except for cheese. Sprinkle a small amount of cheese over tortillas. Arrange chicken and quinoa mixture down center of tortilla. Roll stuffed tortilla, leaving edges open. Spray skillet with olive oil spray. Place wrap in skillet and spray other side of wrap. Cook until golden brown and crisp. Serve with chopped avocado or fresh red pepper slices.
