Sprinkle a small amount of cheese over tortillas. Arrange chicken and quinoa mixture down center of tortilla.
Roll stuffed tortilla, leaving edges open. Spray skillet with olive oil spray. Place wrap in skillet and spray other side of wrap. Cook until golden brown and crisp.
Serve with chopped avocado or fresh red pepper slices.
