Dad's Chili

Ingredients

1 medium Green pepper chopped

1 medium onion Finely chopped

1 pound Ground beef optional

crushed red pepper to taste, but be careful! This adds a lot of heat fast.

1 tablespoon Cilantro Fresh chopped or 1 teaspoon dried

28 ounces Tomatoes crushed or pureed is my choice, can use diced. Get the Unspiced variety

1 can tomatoes with green chilis diced - optional

1/2 - 1 teaspoon Paprika

1 - 2 teaspoon Ground cumin

1 - 3 tablespoons Chili powder

28 ounces kidney beans [kidney, northern, black, whatever – But do NOT use “Chili beans” – they are already spiced] if using meat, add less beans.

Water

Salt and pepper to taste


Directions

Sauté the onions and green peppers in a bit of veg oil 3-5 minutes. Add crushed red pepper and cilantro. Cook a minute or two more. Add meat and brown, if using meat. Add all other ingredients, stir gently to mix and simmer for at least 1 hour – longer is better Variations: Add finely chopped jalapeno or chipotle peppers Add Dried Mexican oregano – 1 tsp. Add cinnamon ~ ½ - 1 tsp (a little goes a long way)
