Sauté the onions and green peppers in a bit of veg oil 3-5 minutes. Add crushed red pepper and cilantro. Cook a minute or two more. Add meat and brown, if using meat. Add all other ingredients, stir gently to mix and simmer for at least 1 hour – longer is better
Add finely chopped jalapeno or chipotle peppers
Add Dried Mexican oregano – 1 tsp.
Add cinnamon ~ ½ - 1 tsp (a little goes a long way)
