1. Preheat oven to 425 degrees
2. Saute mushrooms on their own and remove from pan with 1 tablespoon of oil. Add remaining oil and onions and cook until tender. Once tender add garlic and cook until fragrant and add greens until wilted. Cook in 10 inch oven safe pan or if you don't have an oven safe pan you an add to a similiar size baking dish, depending on size may take longer or shorter to bake.
3. In a bowl, while veggies are cooking mix Parmesan cheese, eggs, half-n-half and scallion.
4. Once veggies are done, mix veggie and egg mixture in pan, top with gruyere cheese.
5. Bake in oven for 20-30 minutes or until firm in center.
