Ingredients

1 can Jumbo Lump crabmeat 16 oz can

1/4 cup Mayonnaise Dukes Mayo

1 tablespoon Dijon mustard 1/2 course - 1/2 regular dijon

1/2 tablespoon Old Bay seasoning

8 each Ritz is preferred (ground finely) or any butter cracker will work

2 each Scallions Sliced thin (whites and Greens)

Directions

Add all ingredients together except the crab and mix thoroughly. Taste. (Since there are no raw or uncooked ingredients, this is a good way to make sure you like the flavors) Add salt and pepper if desired. Gently add crab and fold gently so as not to break up the lumps of crab. If too wet , add more Ritz crackers (or panko). Divide evenly into 6 crab cakes. Pan sear until golden brown once on each side in light olive oil. Serve.
