One pot paprika chicken

Ingredients

2 TBSP olive oil

2 white onions finely chopped

1-2 tsp paprika

1 tsp ground cumin

4-6 boneless skinless chicken thighs

2 x28oz cans diced tomatoes do not drain

1/2 cup pitted kalamata olives

2 cloves garlic minced

1/2 cup chopped fresh basil or parsley


Directions

1) Heat the olive oil in a large skillet set over medium heat. Add the onions and saute until translucent, 5-7 minutes. 2) Add the paprika and cumin. Saute for 1 minute. 3) Add the chicken, tomatoes, olives, and garlic. Bring to a soft boil for 3 minutes, then reduce heat to medium-low and simmer until chicken is fully cooked and sauce has reduced slightly, 25-30 minutes. 4) Top with fresh basil and serve.
