Oven Baked Onion Bhaji

500 g (17.5oz) of onion halved and sliced

pinch of garlic powder

pinch of ginger

pinch of turmeric

1/4 cup of canned chickpeas drained

1/3 cup of sweet potato grated

salt to season (optional - leave out for little on

1 tsp of ajwain seeds (if you can't get these use cumin

1 egg

olive oil spray

1/2 upof yogurt

bunch of fresh mint finely chopped

juice of half a lemon

1 tsp of maple syrup

tablespoon of ghee (or oil of choice)
