Quick Mexican Rice

Quick recipe for Mexican style rice using precooked leftover rice.

Ingredients

3 cups Long grain rice cooked and cooled

1 8oz can El Pato Mexican Tomato Sauce

1 tablespoon Fresh oregano finely chopped

1 teaspoon Ground cumin

1 tablespoon Extra virgin olive oil

1/4 cup White onion chopped

1 clove Fresh garlic, peeled and chopped


Directions

In a large saucepan, heat olive oil over medium heat and saute onion until soft. Add garlic and saute briefly until fragrant. Add oregano, cumin and tomato sauce and simmer briefly. Stir in rice to combine and heat thru. Serve.
