Buttermilk pancakes that stare back. Caramelized pineapple rings and maraschino cherries add both taste and visual impact to simple box-mix pancakes. This recipe provides instructions for using 'Krusteaz Heart Healthy Buttermilk Complete Pancake Mix'; but, any box-mix that suits your fancy can be substituted (including wheat, etc.). Use as much of the batter as you want to make two pancakes per serving and, if any mix left, make additional plain pancakes to freeze for microwaving and eating later for breakfast.
Microwave bacon with paper towels on both sides for about 3 minutes. Let sit in microwave to stay warm while preparing pancakes.
Prepare pancakes on griddle/skillet large enough to hold 4 pancakes (if smaller, make two at a time):
(1) Blend mix and cold water together with a wire whisk until slightly lumpy (do not overmix). Let stand while preparing pineapple.
(2) Spray a griddle/skillet with cooking spray and heat over medium heat (about 375 deg. F). Once warmed, rub griddle with butter (optional but recommended for flavor).
(3) Pat pineapple rings dry with paper towel, and place on warmed griddle and cook until they start to caramelize and turn golden brown; flip rings and heat until starting to caramelize on the second side. Then place a marischino cherry in center of each ring.
(4) Pour about 1/4 cup of batter on top of each cherry and let spread evenly in a circle over the edge of the pineapple rings; use more batter if larger pancakes are preferred. Let cook about 1-1/2 minutes or until turn golden brown; flip with spatula and try to keep cherry in center of rings. Cook until second side turns golden brown.
Serve with cherry-side up accompanied with bacon, butter substitute (or, if preferred, real butter for you light-weights), and syrup.
