1. Preheat panini press or indoor electric grill.
2. Cook onion slices with cooking spray. Cook in panini press or indoor grill 4 to 5 minutes or until tender; remove from grill.
3. While onion cooks, combine goat cheese and next 2 ingredients in small bowl, stir until well bended.
4. Spread goat cheese mixture on top half of baguette. Spread mustard on bottom half of baguette; layer evenly with roast beef, grilled onion, and arugula. Replace top half of baguette.
Cut baguette into 4 sandwiches. Cook sandwiches in panini pieces or indoor electric grill 3 to 4 minutes or until golden brown.
