Preheat oven to 350 degrees. Roast cauliflower slices on cookie sheet 15-20 minutes, until tender. Sauté onion, leek, garlic, and celery in butter until soft and aromatic. Add salt and then the roasted cauliflower. Toss until the cauliflower is completely covered with the onion mixture, then cook another 2 minutes. Add the broth and water and simmer another 5 minutes. Purée
in a blender until smooth. Pour back into the pot and reheat to a simmer. Add the cheese and cream; stir in the Chimichurri sauce well. Serve in bowls drizzled with pablano Creme fraiche.
CHIIMICHURRI SAUCE: (process all these in a blender)
1 Serrano chili, seeded and chopped
2 Garlic cloves, peeled and smashed
2 Cups cilantro leaves
2 Tablespoons mint leaves
5-6 Tablespoons olive oil
1/2 Tablepoon lemon juice
1/2 teaspoon salt
PABLANO CREME FRAICHE: (process all these in a blender)
1 pablano pepper, roasted, peeled, and seeded
2 garlic cloves, peeled
1/8 teaspoon salt
1 Tablespoon olive oil
2 Tablespoons heavy cream
2 Tablespoons Creme fraiche
Pinch of sugar
