Ingredients

4 each Guajillo Peppers Seeded and Choped

5 each Chiles de Arbol Seeded and Chopped

1 each Ancho Chile Seeded and Chopped

1 tablespoon Chipotle Puree

2 tablespoons Canola Oil

2 tablespoons Minced garlic

2 cups water

2 teaspoons Cumin

1 tablespoons mexican oregano

1 tablespoon salt

2 teaspoons pepper

1/2 cup white wine vinager

1/4 cup sugar

2 tablespoons taco seasoning

1 cup chopped cilantro

56 ounces Fire roasted Tomatoes


Directions

Roast all the chiles in a large pot for about 3 min until color changes slightly darker Add oil, garlic, all spices, and chipotle puree. Saute until garlic is softened and browned just a bit. Don't overcook garlic. Add water and simmer for 10 minutes. Do not discard water Add tomatoes and simmer for 15 minutes Add all ingredients including cilantro and blend well in vitamix until smooth
