Directions
Cook down onion, bell pepper, celery and garlic in a little oil for about 10 minutes in a covered pot, stirring frequently. Next, add in okra and tomatoes. Cook these down for another 10-15 minutes until everything is soft. The acid from the tomatoes will cut out the slime from the okra.
Add stock to cooked vegetables and bring to a boil. Mix in roux and simmer on high heat until roux is mostly dissolved. Add in the rest of your ingredients and let simmer for about an hour, remove a little and once it’s cooled taste test it. Adjust seasonings if needed and let simmer for about another hour or until the okra is falling apart.
