Shrimp & Okra Gumbo

Ingredients

2 lbs large frozen or fresh shrimp

1 lb frozen okra

8 cups chicken stock

1 1/2 cups dice onion

1 1/2 cups diced green pepper

1 cup diced celery

3-4 garlic cloves

1 16 oz can petite diced tomato (or 1.5 cans of Rotel)

1 tbsp dried Parsley

2 tsp dried Thyme

1 bay leaves

1 tbsp Tony’s seasoning

3 heaping tbsp of Savoies dark roux (or half of a sm

Onion & garlic powder (not a must I just like to use both fresh and dried seasonings)


Directions

Cook down onion, bell pepper, celery and garlic in a little oil for about 10 minutes in a covered pot, stirring frequently. Next, add in okra and tomatoes. Cook these down for another 10-15 minutes until everything is soft. The acid from the tomatoes will cut out the slime from the okra. Add stock to cooked vegetables and bring to a boil. Mix in roux and simmer on high heat until roux is mostly dissolved. Add in the rest of your ingredients and let simmer for about an hour, remove a little and once it’s cooled taste test it. Adjust seasonings if needed and let simmer for about another hour or until the okra is falling apart.
