Slow Cooker Chicken Tikka Masala

Ingredients

1 1/2 pounds Boneless chicken breasts cut into bite size pieces

1 large Onion finely diced

4 cloves Garlic minced

1 inch piece Fresh ginger peeled and grated (about 1.5 heaping TBSP)

1/2 teaspoon Turmeric

1/4 teaspoon Cayenne pepper

2 teaspoons Ground Coriander

1/2 tablespoon Ground Cumin

1/4 teaspoon Garam Masala

1 tablespoon Smoked Paprika

1/4 teaspoon Sea Salt

1/4 teaspoon Ground black pepper

15 oz Organic Tomato Sauce

1/2 cup Unsweetened coconut milk canned

1/2 cup Heavy cream

1 handful Cilantro Chopped

Brown rice


Directions

1. Lightly spray the inside of slow cooker. 2. In slow cooker, combine chicken, onion, garlic, ginger, seasonings, salt and pepper. 3. Add in tomato sauce, coconut milk and heavy cream. Gently stir to combine. 4. Cover and cook on High 4-5 hours or Low 8-9 hours. 5. Serve over cooked brown rice with fresh cilantro for garnish. Note: Chicken thighs can be used in place of chicken breast.
