2. In slow cooker, combine chicken, onion, garlic, ginger, seasonings, salt and pepper.
3. Add in tomato sauce, coconut milk and heavy cream. Gently stir to combine.
4. Cover and cook on High 4-5 hours or Low 8-9 hours.
5. Serve over cooked brown rice with fresh cilantro for garnish.
Note:
Chicken thighs can be used in place of chicken breast.
