Ingredients

Red Potatoes Steamed

Garlic chopped

Heavy Cream

Herbs Rosemary, thyme

salt and pepper

clarified butter


Directions

Cook potatoes in the steamer until tender or a toothpick can be easily inserted into the center. Move potatoes to the flat grill and coat with clarified butter. Let them sear and develop a crispy skin. When the potatoes are hot all the way through and crispy, using a heavy spatula, smash all of the potatoes. Sprinkle the garlic and herbs all over the potatoes and let cook for 1-2 minutes. Add cream to the flat grill and mix into the potatoes. Season with salt and pepper and taste. When the cream is reduced and the seasoning has been adjusted, serve immediately.
