SW Chicken & Black Bean Burritos

Ingredients

4 Chicken Breasts boneless, skinless

1 teaspoon Ground Cumin

1 teaspoon Chili Powder

2 dashes Tabasco Sauce

1 tablespoon Olive Oil

1/2 medium Spanish Onion chopped

2 cloves Garlic minced

1 can Black Beans drained, rinsed

3 tablespoons Salsa

Kosher Salt

Black Pepper

1 head Romaine Lettuce shredded

6 Scallions thinly sliced

2 Tomatoes chopped

4 large Flour Tortillas

Cheddar Cheese shredded, for garnish

Sour Cream for garnish


Directions

1) Rub chicken with cumin, chili powder, and Tabasco. Heat a griddle pan to high. Cook chicken breasts, 4 minutes, on each side and remove from heat. 2) While chicken is cooking, heat a skillet over medium-high heat. Go once around the pan with oil. Cook onions and garlic until onions are soft, about 5 minutes. Add beans and salsa. Chop cooked chicken breasts and droop into salsa/beans mixture. Heat mixture through. Season with salt and pepper. 3) Place a tortilla on a plate and pile chicken and beans in center. Top with scallions, cheese, tomatoes and sour cream. Wrap. 4) Serve with chips and salsa.
