Suggest a better descriptionIn a large non-stick skillet over medium heat, saute onion and garlic in olive oil for 2 minutes. Add chopped celery, carrot sticks and saute 3 minutes more, or until crisp-tender. Add leftover turkey, stewed tomatoes, herbs, salt, pepper, leftover vegetables and mix well. Simmer, stirring occasionally, 8-10 minutes. Gradually add hot cooked pasta to skillet. Spoon into serving bowls or plates and pass the cheese, if desired. TIP! this would also work well as a "must go" main dish soup. Just add 1, 16 oz. can or more (depending on preferred consistency) low sodium chicken broth.
