Snow Pea and Mango Salad with Hazelnuts Ingredients

1 lb Snow peas;or sugar snap peas	1/2 ts -salt
2 Mangoes; peeled & thinly	1/4 ts -Pepper
1/2 c Red pepper; finely diced	3 tb Hazelnut oil
DRESSING	3 tb Vegetable oil
3 tb Lemon juice, fresh	3/4 c Hazelnuts; chopped, toasted

Instructions for Snow Pea and Mango Salad with Hazelnuts

In large pot of boiling water, blanch peas for 1 minute; or until colour is set. Immediately drain and refresh under cold running water. When cool, combine in bowl with mangoes and red pepper To make dressing: In a small bowl, whisk together lemon juice, salt and pepper.
