Azuki Bean

Small and red with a sweet flavor and soft texture, these beans are widely used in Japanese cooking. They are often used as a side to savory steamed rice dishes, or they can be boiled, mashed and sweetened into a red bean paste, which is used in a range of desserts including puddings, pastries, and shaved ice. To prepare dried beans, soak overnight, bring to a boil and simmer 1-1/2 to 2 hours. Dried beans can be stored in an airtight container for up to 1 year.
