"This was a really good recipe. It was exactly what I wanted a Italian meatball soup should taste like. I made if gluten free by using brown rice bread crumbs and GF noodles. I also cooked the noodles separate, bout only because GF noodles tend to get mushy fast. Thanks for posting"- Mrsswill

Combine meat, egg, bread crumbs, spices and cheese (optional) in medium sized bowl. Mix well. Shape into small meatballs ( use about 1 teaspoon of mixture per meatball ).
Heat olive oil in large skillet. Saut meatballs over medium-high heat, turning often, until just done. (about 5 minutes) Do not overcook as the meatballs will get further cooking in soup. Set aside.
Bring broth and water to boil in large saucepan or Dutch oven. Reduce heat to low.
Add meatballs, pasta and spinach. Cover and simmer until pasta is done. (about 10 minutes).
Makes about 8 servings.

laylabahrami 1 year agoDelicious soup. Added grated onion and garlic to the meatballs which were amazing. Add 1 tbsp salt and the soup is perfect!
michellehershseidle 1 year agoThis soup was fantastic! I used bison to cut down on the fat of the meatballs. I also used orzo, but only use about 3/4 cup or it becomes too thick. I substituted fresh spinach for frozen. Very tasty!
Sarah6851 2 years agoSimple and delicious! I made the pasta separately and added it later. Served it with ciabatta bread and sprinkled it with Parmesan cheese.

ear3d 3 years agoWas good, next time I will leave out water and just add more broth, after adding all ingredients lost a little of the broth flavor also added diced celery and carrots, overall very good

lcsaul 3 years agoIt was really good & easy to make. I added a lot of salt, used orzo pasta, turkey. I like my meatballs fluffier / less dense, so next time I would use more breadcrumbs to achieve that.

gauby 3 years agoSimple and quick to make. I note that the pasta soaks up the liquid, so it becomes more of a casserole the second night.
