I have made this recipe several times and it is very good and very close to what you get at the Olive Garden. I cooked it in the pressure cooker this time, but have also cooked it on top of the stove. It makes a LOT!

mlgray ,My family and friend absolutly love this soup. I add almost 2x the amount of herbs and garlic and also add in Herbs de'Province and dried chili peppers for a little heat. I also brown my extra lean ground beef in a tblsp of olive oil. For less sodium I use all no salt added tomatoes and beans. As for the pasta I don't add it directly to the soup as if you have leftovers it thickens the soup too much. Instead, I spoon soup over the pasta as I serve it, This way you can save the left over pasta and soup for the next day. Should it thicken I simply add no salt added beef stock.13y

amica2626 ,I've never had the Olive Garden version, but this was really hearty and yummy with fresh french bread. Makes enough for probably 12 people - I froze some of the leftovers and will see how it comes out of the freezer. I would definitely make it again, though - very good!13y
terlingua ,This soup tasted very similar to the Olive Garden version. I served it last night with parmesan & black pepper breadsticks and a salad. I have plenty of the soup left and plan to serve it again for lunch tomorrow.14y
talheure ,Excellent, hearty soup. Next time I'll try browned Italian sausage instead of ground meat. My family (2 teens, hubby) loved it as is, but it was just a little bland to bite into a chunk of plain ground meat to me.14y
erembry ,Delicious!! I used diced tomatoes "in garlic and olive oil," added an extra can of water, and let it simmer for 2 hours. Absolutely fantastic and really easy to make!14y
mysterie91 ,This tasted just like the soup at the restaurant. I would recommend this to anyone looking for a hearty soup like the restaurant. Just get a BIG container of the v8 - you will need at least 24 oz since it turns thick. And we added some red pepper flakes for alittle kick. For the PP who said this isn't how OG makes it - of course not, they have a "meat sauce base" for the soup, that is where the V8 and vinegar flavors are.14y
viola111 ,OMG. Don't even bother trying it. The Pasta e Fagoli at Olive Garden's is the worst!! It tasted like chili. Look at the ingredients; V8 juice and vinger?? I was looking forward to real Pasta e Fagoli like my grandmother used to make. I was so disappointed.14y
