Cauliflower Mash Potatos
"I love mashed potatoes and don't think this replaces them, but it's a different and nice treatment of the vegetable. I merely mashed the cauliflower and other ingredients with a potato masher instead of using a blender, so my version may be a bit more chunky than intended." - LIAatWLLOYield: 4 Ready in 45 minutes

Liz's Cauliflower Mash Potatos Preparation
Set a stockpot of water to boil over high heat. Clean and cut cauliflower into small pieces. Boild cauliflower for about 6 minutes, or until well done. Drain well. Pat cooked cauliflower very dry between several layers of paper towels. In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, butter, Parmesan, garlic, salt and pepper until almost smooth
