Slightly flatten chicken breasts and sprinkle with chilli salt and black pepper. Fry in a little oil for about a minute on each side or until breasts are cooked through. Warm the ciabatta in a preheated oven for about 5 minutes and slice as needed. Spread each side with a little chilli jam, top the chicken with lots of rocket leaves and a layer of tomato slices.
