Sweet Peppers Stuffed With Rice and Ground beef
2 cans chopped tomatoes 2 tablespoons mediterranean cous cous seasoning
Combine rice and water in a pan and bring to boil and simmer for 20 mins
place bacon in frying pan until browned, save dripping and chop bacon and set aside
place mince, bell pepper and onion in frying pan and cook until mince is evenly browned, drain excess grease and season with salt & pepper
Preheat oven to 200 degrees C. Place Beef and cooked rice into a 9x13 inch baking dish, stir in tomatoes,Bacon and saved dripping, mix until well blended.spread grated cheese on top
Bake in oven for 30mins in preheated oven, until cheese is bubbly, and the center is heated through, remove from oven and set aside crispy cheese topping
Stuff sweet peppers with rice/mince mixture and bake in oven for 15 mins until pepper is tender
combine 2 cans of chopped tomatoes and mediterranean seasoning and simmer while peppers are in oven (approx 15 mins)
Place peppers on plate , slice open and drizzle sauce over the top.
garnish with crispy cheese topping and serve
