1 poundcooked ham; diced
1 onion; chopped
1 leek; diced
2 carrots; diced
1 cupcabbage; chopped
1/4 cupParsley
4 cupsBeef broth
1 poundpotatoes; diced
1 Bay leaf
2 teaspoonsBlack pepper
1 teaspoonSalt
1/4 teaspoonNutmeg
1/2 cupSour cream

German Ham and Potato Soup (good For Leftover Ham) Preparation

Combine onion, leek, carrots, cabbage, parsley, broth, and potatoes to Crockpot. Add seasonings. Cook on Low 8-10 hours, or High 4-5 hrs. Remove bay leaf. Remove the potatoes with a slotted spoon and mash. Combine the taters w/ sour cream. Return to pot and stir. Stir in ham. Serve.

Nice healthy, quick recipe. I didn't put in leeks, bay leaves or nutmeg and we loved it. I was a little curious about the cabbage, but it turned out to be a great mix.

Great recipe and not so difficult to prepare. In order to make it even tastier I added a few slices of jamon iberico de bellota - aka iberico ham or pata negra- thinly cut. Because iberico has a strong and delicious flavor you do not need much, only 50 grams or 1.8 OZ for four people added once the soup is finished.
