1 canGarbanzo Beans; drained, reserve 2 tbls. of liquid
1/4 cuptahini
1/4 cupolive oil
1/2 tsplemon juice
1 clovegarlic
1/2 tspsalt
1/4 tsppepper
1 tspcumin
1/2 tspcoriander
1/2 tspturmeric
1/2 tsppaprika

Spicy Hummus Preparation

Place all ingredients in food processor or blender, including the 2 tbls. reserved liquid. Puree until smooth. Serve with warm pita, raw veggies, veggie or rice chips. Can also be used as a sandwich spread or on chicken.

With a good sharp blade on your Cuisinart, I've found you can cut down the olive oil a bit, but that's nitpicking. This recipe is unbelievably good and anyone who likes hummus will love it. I've now made it three times and it's better each time. One modification that I've made is to roast several (20 of various sizes) cloves of garlic with olive oil in the oven for about 20 minutes @350F. This does two things: it mellows out the harsh flavors that raw garlic can have and makes it easier for the Cuisinart to blend it into a smooth texture. I tend to like more flavor coming through in my dishes, so I think the amount of garlic called for is a little bit low. However, it doesn't take away the fact that this is an excellent recipe that is SO easy to make that it will become a mainstay of your entertaining portfolio.
