Preheat oven to 400. Trim excess fat from roast. Sprinkle on all sides with salt and pepper. In heavy skillet brown roast on all sides in olive oil over medium heat. Remove pork from pan and add remaining ingredients to skillet. Cook and stir over medium heat until sugar dissolves and mixture comes to a boil.
Place pork in roasting pan and roast at 400 for 30 minutes. Then pour apple cider mixture over all and roast 35-45 minutes longer, basting occasionally with sauce until instant-read thermometer measures 160. Cool pork and sauce in fridge. Thinly slice pork and place in zipper-lock bad along with sauce. Seal bag, label and freeze.
Thaw overnight in fridge. Place pork and sauce in heavy skillet and bring to simmer over medium heat. Dook for 4-5 minutes, until pork is thoroughly heated.
